Not-So-Sloppy Joe Pockets


I have to start by saying that this recipe is a combination of recipes and ideas that I have come across and then I put them together and added my own touches.  The filling is my own sloppy joe recipe that I have created through MANY experiments, the idea to make it into a pocket came from seeing a lot of other "pockets" on pinterest.  I thought to myself ... "Man, sloppy joes would be so great if they weren't sloppy! I could put them in a pocket!"   Like many of my recipes, you can alter ingredient amounts to fit your taste.

Ingredients:

  • 1lb ground beef
  • 1 c ketchup (you could go up to as much as 2 c depending on your taste)
  • 1/2 cup water
  • 2 to 4 T brown sugar
  • 1 t worcestershire
  • 1/2 t brown or yellow mustard
  • 1/4 c finely chopped onion
  • 1/4 c finely chopped green bell pepper
  • 2 cloves minced garlic
  • Handful of fresh, chopped parsley
  • salt and pepper
  • Shredded cheddar
  • 2 - 8ct flaky layers biscuits, jumbo size ( i use flaky layers because when they are flattened out, they bake up more fluffy.  regular ones get really dense and strange when they are flattened)

Make it:


  1. Brown beef in skillet, season with salt and pepper, and drain fat.
  2. Place beef back into skillet and add ketchup, water, brown sugar, worcestershire, mustard, onion, bell pepper and garlic.  Simmer on low for about 15 minutes or until thickened.  Stir in the parsley at the last minute.
  3. While the beef mixture simmers, roll out the biscuits to approximately 6 inch circles and preheat oven to temperature on package.
  4. Place one to two tablespoons of meat on the biscuit and top with a sprinkle of cheese.  Fold over the dough and crimp the edges together.  Make sure to get a good seal.
  5. Bake according to directions on biscuit package.
